Tenuta Giustini bevindt zich in Salento – de “hak” van Italië, in de zuidelijke regio van Puglia. De wijngaarden liggen relatief dicht aan zee. De vruchtbare bodem, de zeewind en het warme, zonnige klimaat in de regio hebben de ideale omstandigheden gecreëerd om de wijnstokken en inheemse druivensoorten tot bloei te laten komen. Met name de Scirocco en Tramontana winden zorgen ervoor dat de temperatuur in de wijngaarden iets getemperd wordt.

Het familiebedrijf wordt geleid door Giuseppe Papadopoli. Hij wordt bijgestaan door zijn twee zoons Salvatore (oenoloog) en Federico (keldermeester). 

Giuseppe en Salvatore Papadopoli streven ernaar om het beste van de lokale druiven naar boven te halen door in winter en zomer te snoeien, manueel te oogsten en streng te triëren. In de wijnmakerij werken ze bewust met vinificatietechnieken bij lage temperatuur en gebruiken hierbij uitsluitend inheemse gisten, om het beste in hun wijnen naar boven te halen. Ondanks het warme klimaat slagen zij erin hun wijnen de nodige fraîcheur mee te geven.

Patu is een hommage aan de Griekse roots van de familie Papadopoli. Deze primitivo zonder houtrijping is vol fruitig met vooral aardbeien en zwarte kersen. Heerlijk met geroosterd vlees, pittige kazen of fijne charcuterie.
