Taittinger Nocturne "City Lights"
The champagne has nice small and persistent bubbles. The scent is fresh with lovely aromas of white flowers and ripe fruit, with nuances of peaches and dried apricots. It is a fresh and semi-dry Champagne with a lovely taste dominated by raisins and pickled fruits. The aftertaste is persistent, soft and full of sweetness.
The grape composition is: 40% Chardonnay and 60% Pinot Noir/Pinot Meunier.
The champagne can be recommended for desserts, wreath cake and foie gras.
Taittinger produces their Nocturne Sec quality every year. The finished Cuvée (blend) contains around 30 different "crus" from several different vintages. Champagne Taittinger Nocturne Sec is fermented and aged for at least 4 years. After fermentation and aging, the wine is "completely dry" and in order for the champagne to become "Sec" a sweet liqueur made from Champagne and cane sugar is added (17.5 grams of cane sugar per litre). It is this process that is called "dosage" in French.
A little about Taittinger; Champagne Taittinger was founded in 1734 and is thus the 3rd oldest still existing Champagne house, which is also owned and managed by the Taittinger family. Top quality and respect for traditions are a very high priority at Champagne Taittinger, which owns 288 hectares of vineyards in the best area of Champagne. This ensures a steady supply of top quality grapes for the production of delicate, well-balanced Champagne. Taittinger's cellars are located under St. Nicaise monastery, which in the 13th century belonged to Benedictine monks. The monks used the cellars to store their wines. These cellars are all that remains of the abbey, as it was destroyed during the French Revolution. Today, as mentioned, the cellars are used by Taittinger, and here they have a total capacity of approx. 22 million bottles.
